I have a 32' commercial fishing boat in Bristol Bay, Alaska. I select the very best salmon from my catch, ice them immediately, and have them filleted, vacuum packed and flash-frozen--locking in that just-caught flavor. Defrost one and you have a sashimi quality salmon.
