Regarding differences between species of salmon:
Sockeyes: (also called Reds) are the richest tasting, highest in
oil content (and omega 3 content) firm and most red in flesh color. Sockeyes
are always wild --they cannot be farmed. Bristol Bay, where I have a fishing
boat, gets half of the world's sockeye run. Japan buys most of the sockeye
so it's often hard to get in the US.
Chinooks: (also called Kings) are also high in oil content and
quite variable from region to region in Alaska. Some are white-fleshed,
some red. Because of the high oil content, they smoke well.
Cohos: (also called Silvers) have a lower oil content and milder
taste than Chinooks and Sockeyes, have about 25% fewer calories, and are
more of an orange-red in color. During the fishing season, we tend to
barbeque Sockeyes and Chinooks and bake Cohos.
